Freeze Dried Strawberries

Any of you mamas out there ever sneak some of your little ones baby food?

DON’T FIB!  I know everyone has at least once!!

One of my favorite things to sneak a bite of was the freeze dried fruit that.  YUM YUM!  When I saw these freeze dried strawberries at TJ’s if people weren’t in the store I would have jumped up and down and did a happy dance.  As it was, people were in the store so I did it in my head,  a happy dance that is.

The best part is these freeze dried strawberries are even better than the baby snack kind, imagine that!!  I hope you give them a try, you will be glad you did.  Here are some ideas of how to incorporate the strawberries into some wonderful recipes. Aren't these beautiful?!!!!!

This morning my boys had a spring show so the parents could see all the  music they have been working on this year.  SO ADORABLE!!

When they first walk on to the stage my kids are all timid and shy.  As soon as they see me waving and smiling at them all the nerves are gone and a HUGE smile shines across their face.  I love that as their mommy I can give them the confidence they need even with a simple smile!!

Life is so sweet!

Graddsas Cream Meatballs

My biggest boy went on his first big boy hike with his scout troop.  It was 5 miles and the destination was a gorgeous waterfall.  I intentionally left out details about the hike because generally if it involves any physical activity he wants nothing to do with it.

He started to complain right before we left, so I just focused on the good things about the hike. 

“You are going to have so much fun!!” 

“Oooooh and at the top you get to see a water fall!!!”

 

“Think about hangin’ out with the boys for almost the entire day!!” 

“Oh and if you don’t go you will not get to play with your cousins and will also have to stay in your room the entire day and you will have to listen to your brother and sister having fun while you are not!!”

He didn’t complain any more after I said that.  SEE, all positive reinforcement right?!?!  And when he got home he was glad he went and so proud that he reached the top!!

I had to share these meatballs that Alicia Furst brought over to us.  I had never had a meatball with a cream sauce on it.  We usually have a marinara or sweet and sour sauce with them, so this creamy sauce was a pleasant surprise. 

Loved it!!!!

Graddsas Cream Meatballs

1 package of your favorite frozen meatballs

1-2 Graddsas Cream Sauce Mix (found at IDEA)

*Warm up your favorite meatballs.

*Mix up the Graddsas cream sauce mix per the directions on the back

*Put the sauce on top of your meatballs and enjoy

Some days you work over time as a Mom of three.  This week my little princess has had the flu.  All you parents out there know what it is like when one of your munchkins gets sick.  In the professional world I believe it would be called OVERTIME!  As in 24 hours a day over time with your “job” slash precious child stuck to your side as you sleep.

On one of the last nights of her sickness my darling little girl went to the restroom.  Then I hear her little voice say, “Mommy!  Mommy!”  I thought  oh dear…..

When I got to the door she said, “Mommy…I accidentally accidented on the floor.”

She had the saddest look on her face and I could tell she felt REALLY bad about what had just happened.  Poor little girl. 

That is what you call triple overtime for a Mom.

One of my dear friends Barbara Frost brought these over to us one evening and they didn’t last long.  My kids ate them in about 2 seconds flat.  They are flaky and super easy to make using puff pastry sheets!!

Mini Cheese Straws

2 Sheets (1box) Frozen Puff Pastry, Defrosted

1 Extra-Large Egg

½ Cup Freshly Grated Parmesan Cheese

1 Cup Finely Grated Gruyere Cheese

1 tsp Minced Fresh Thyme Leaves (you can use dry)

1 tsp Kosher Salt

Freshly Ground Pepper

*Preheat oven  to 375

*Roll out Each sheet of puff pastry on a lightly floured board until it’s 10 x 12 inches.

*Beat the egg with 1 TB of water and brush the surface of the pastry. 

*Sprinkle each sheet evenly with ¼ Cup of the Parmesan, ½ Cup of the Gruyere, ½ tsp of the thyme, ½ tsp of the salt, and some pepper.

*With the rolling pin, lightly press the flavorings into the puff pastry.  Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips.  Twist each strip and lay on baking sheets lined with parchment paper.

*Bake for 10-15 minutes, until lightly browned and puffed.  Turn each straw and bake for another 2 minutes.  Don’t over bake or the cheese will burn.  Cool and serve at room temperature.

My name is Joanie Harbor, and I recently started up an etsy shop called "JoMazing Accessories."  I really got interested in doing hair accessories and headbands when I found out I was pregnant with a little girl.  She is now a month old and I love dolling her up!  I also have a very energetic 2 year old son who keeps me on my toes.  I love being a stay at home Mom!! I have gone GLUTEN FREE.

I assure you it is not by choice.  I am still trying to figure out why I am not healing properly and in an effort to improve my health I asked a dear friend of mine, Summer Wines (love you!), to give me suggestions on a homeopathic way to get better since all of the doctor’s suggestion and medications have not worked. 

One of her suggestions was to try going gluten free.  She also suffers from headaches and sometimes migraines and since she had gone gluten free she hadn’t had a headache for the 2 months since she stopped eating gluten.  One night she had a piece of French bread and BOOM got a headache and had to go to bed for the night.

So I said to myself, “Self, maybe there is something to this gluten free stuff.”  I have to admit before I thought all the homeopathic stuff seemed like voodoo to me, but I don’t think that any more.

I have actually really and truly noticed a BIG difference in how I feel and the level of pain I have experienced has gone significantly down since I have gone gluten free.  (it has been about a month)

Maybe you should give it a try too if you are headache prone too!!  It has been pretty easy because the reason I am trying to get better so I can be a better Mom to my precious kiddos and wife to my hubby. (and for myself of course)

Besides this recipe doesn’t even taste gluten free!!  I have found that if you toast the gluten free bread, it doesn’t taste any different from regular bread.  Honest and truly!! I have also found that Udi gluten free bread tastes a lot better than the Trader Joe's brand.

Gluten Free Grilled Cheese Chicken Sandwich

4 slices of Udi’s Gluten Free Bread

½ Cup Cheddar Cheese

½ Cup Mozzarella Cheese

2 tsp Butter

A few pieces of left over chicken

*Preheat a griddle or large pan to medium heat.

*Butter one side of each piece of bread.

*On the side of the bread that is not buttered sprinkle a little of the cheddar and mozzarella cheese.  Dividing evenly among the two sandwiches. 

*Place a couple of pieces of chicken on top of the cheese.

*Put the sandwiches together making sure the butter side of each piece of bread is on the outside. 

*Place the sandwiches on a preheated griddle or large pan.  Cover with a lid.  This will allow the bread to toast while melting the cheese.

*Flip over and let the other side toast and then ENJOY!!!!

Isn’t life grand!  After a 4 week break of not being able to work out, now I can!!  I am so excited.  I may not be able to work out like I used to but even if you are going slow, you are lapping everyone on the couch, right?!!!! (saw that saying on FB)

So this old gray mare may not be what she used to be but she is still alive and kickin’!

It is a new week.  Thank the heavens!  

Sometimes the start of a fresh new week is what you need to take a deep breath, recommit to goals you have set for yourself and start checking it off your list.

So here is a healthy, delicious, fresh platter of veggies to start your week off in the right direction.

Chipotle Veggie Dip in a Cabbage Bowl

1 bottle of your favorite Chipotle Salad Dressing

1 Whole Cabbage

1 Yellow Bell Pepper

2 Large Carrots

5 Spears of Asparagus

*Substitute any of the veggies for your favorite veggies.

*Cut a little of the bottom of a head of cabbage and then cut off the top of the cabbage. 

*Hollow out enough to make a “bowl” big enough for the dressing.

*Pour the entire bottle of dressing in the cabbage “bowl”

*Slice up your favorite vegetables and place on a serving dish surrounding the chipotle dip.

Yesterday we went to the Santa Barbara Zoo.  My boys haven’t been in a while and it was the first time my little girl had been to the zoo.  I love how my kids can still make things fun and exciting just by being who they are.  They are still little enough to look at things with such wonder

A holiday is not a holiday without the pink stuff and is also the perfect spring time dessert.  It is light fluffy and loaded with delicious fresh fruit.  It was one of the very first recipes I ever posted and I think it deserves to appear on Made Famous By every now and then because it is that special to me.  My Grandma Scott made it every holiday and as a child I always looked forward to it!  My SIL Kathryn made this yummy batch of Pink Stuff for Easter.  It was SO YUMMY!!

Pink Stuff

4-5 Large Containers of Cool Whip

3 large packages of Strawberry Jello

2 cans or fresh Pineapple cubed

2 cans Mandarin Oranges

4-6 Cups Fresh Strawberries

1 bunch Grapes, halved

3 cups Blueberries

2-3 Bananas sliced

2 Cups Blackberries

*Mix the cool whip and Jello together in a large bowl.

*Drain the pineapple and mandarin oranges then add them to the cool whip.

*Slice up all the fruit and mix it into the cool whip until well combined

*Chill for at least 2 hours.  I like to make it the night before.

It is spring break over here in these parts, which is wonderful because I get to spend a lot of time with my kids!!  It also means that I don’t get very much blogging done because I try not to be on the computer when my kids are home.  I think it is important that they get my full attention when they are home and I really try to give it to them.  I love those babies of mine!!!!
