Sausage and Pepper Heroes

1 pound Italian style turkey sausage cut into 1/2 inch slices
1 sweet onion, sliced
1 TBS olive oil
1 Red Bell Pepper, thinly sliced
1 Green Bell Pepper, thinly sliced
1/4 C. Balsamic vinegar
Hogi or other type of sand roll

-Saute the sausage until browned, then transfer to a plate
-In the skillet saute the bell peppers and onion until softened. If necessary add up to 4 TBS of water to prevent sticking. Stir in the vinegar, then return the sausage mixture to the skillet; toss to combine
-Split the bread lengthwise almost all the way through. Brush the bread with olive oil then top with cheese. (I use pepper jack)
-Broil the bread until the cheese is melted.
-Top bread with sausage mixture and enjoy!!

*When I add the balsamic I add a TON more then the recipe says. I really like balsamic vinegar though. If you just want a hint of the flavor then add 1 TBS of the balsamic.
