Carrot Cake

Made famous by: Martha McMullin

3 eggs
3/4 C. Oil
3/4 C. Buttermilk
2 C. Sugar
2 tsp. Vanilla

2C. Flour
2 tsp. Baking Soda
2 tsp. Cinnamon
1/2 tsp. Salt

-Mix all wet ingredients together.
-Sift dry ingredients together then add them to the wet ingredients. Mix until well combined.
-Then add:

8 oz can Drained CRUSHED Pineapple
2 C Grated Carrots
3 1/2 oz. Shredded Coconut
1 C. Chopped Walnuts

350 Degrees for 55 min. 9 x 13 pan

Cream Cheese frosting
Chopped walnuts on top.

*If you don't like nuts just leave them out. I do.

**Seriously the best carrot cake I have ever tasted.
