Triple Chocolate Mousse Cake

**This is positively the best cake in all the world. I love it to death and crave it on a regular basis.

Butter 10" spring form

First Layer:
8oz Oreo cookies, crushed
1/4 C. melted butter
Press into bottom of spring form

Second Layer:
Bring 3/4 C. heavy cream to simmer
Reduce heat to low
Add 8oz. dark chocolate
Whisk til smooth
Pour over crust and chill

Third Layer:
Combine 16oz. of good milk chocolate and 1 C. heavy cream in double boiler, stir til smooth
Cool to barely lukewarm

Sprinkle 1T gelatin over 1/4 C. water in sauce pan
Rest 10 min--stir over low heat til dissolved
Add to 2 C. heavy cream and 1 tsp. vanilla while beating
Bring to soft peaks
Fold in chocolate mixture
Pour on the first and second layers, refrigerate til set--about 6 hrs.

Run sharp knife around edge before releasing sides.
