Mexican Rice

I LOVE LOVE Mexican Rice.
But I really hate the kind you make from a packet.
It just doesn't taste anything like the rice you get at an awesome Mexican Restaurant.
So one day I was on a mission to make
a great tasting, made from scratch, that wasn't to difficult,
wonderful Mexican Rice.
Well my Friends I accomplished it!!!!
I made it for my extended family and they gobbled it up!!!
I love when people gobble up my food. For some reason it is one of
the best feelings in the world. I think I get that from my Grandma Scott.
She would love to watch everyones bellies fill to the brim....so do I!
3 TBS olive oil
3 C Jasmine Rice
2 Cans Stewed Tomatoes
8 Cloves Garlic
2 Onions
6 C Chicken Stock
1 tsp Salt
1 tsp Garlic Powder
1/4 tsp Cumin
1/4 tsp Paprika
1/2 Tsp Chili Powder
Pour 3 TB Olive oil into a heated stock pot. Add the jasmine rice. Toast the rice until it is slightly golden. Add the onions and cook until the onions are softened. Once the rice is toasted and the onions are softened, add the stewed tomatoes, garlic, and chicken stock.
While the rice is cooking in a small bowl combine salt, garlic powder, cumin
paprika and chili powder. Pour it into the rice. Once all the liquid is absorbed give the rice one final stir to fluff it up and ENJOY!!
