Chocolate Carrot or Zucchini Muffins
Today I took my little girl to Disneyland.
This is our year, while her brothers are away at school, for us to
have some fun and have some bonding time.
TODAY IT POURED RAIN THE ENTIRE TIME.
I had umbrellas, but I left them in my car.
(I had met my Mom to carpool there.)
We were soaked to the bone and had the BEST time!
It was an adventure to say the least.
My Mom, sister and I just kept looking at each other and laughed!!
It is situations like these where you can pout about the situation or
make it a fun, memorable experience.
When we got home we needed something to warm our bellies.
Muffins speak to me.
So we made some.
I LOVE them!!
1/2 C Buttermilk
1/2 C Room Temp Butter (1 stick)
1/2 C Vegetable Oil
1- 1/2 C Sugar
2 Large Eggs
2 tsp Vanilla
2-1/2 C Flour
4 TB Cocoa Powder
1 tsp Baking Soda
1/2 tsp Cinnamon
1/2 tsp Salt
2 C of peeled & Finely Grated Small Zucchini or Grated Carrots
1 C Chocolate Chips
1/4 C Chopped Pecans or Walnuts (optional)
Preheat oven to 325 degrees, line 2 standard muffin pans with papers. In a large bowl beat the butter, oil and sugar until creamy. Add eggs, vanilla and buttermilk.
Mix together flour, cocoa powder, baking soda, cinnamon, and salt. Add to butter mixture and stir gently, don't beat. Add zucchini or carrots and half the chocolate chips and stir carefully. Spoon the batter evenly into the pans, 2/3 full. Sprinkle the other half o the chocolate chips and nuts on top and bake for about 20 min, testing with a toothpick. Makes 24 muffins.
