I don't know about you, but I praised the Lord a little too much on Thursday-Tuesday.
I have eaten sooooo much candy and ate so much honey baked ham and
yummy potatoes to last a lifetime.....only I want some more right now.
Did any one gain more than the 5 pounds that I did???
I thought that was pretty impressive my self!!!
This pasta salad was made by one of my husbands co-workers.
He and his sweet wife came over to watch a basketball game and brought this bowl full of wonderfulness!!!! I had never tasted a pasta salad with so many different flavors in every bite. I am so sick of the recipe that everyone has. You know the one that has you pour Italian dressing on the whole thing. this is far from that and leaps and bounds better.
Give it a whirl!!

Witherspoon Pasta Salad
1pound Pasta (Pick your favorite shape)
1 Cucumber
1 Can Olives (Cut them in 1/2)
1 Can Garbanzo Beans
2 Cups Feta Cheese
1/3 C. Sweet Onion finely chopped
Pastrami cut into bite sized chunks
2 C Pecans
1 Whole Fennel Root chopped
1 small jar Artichokes with spices chopped into bite sized pieces
2 TB Garlic Powder
3 TB Sesame Oil
2 TB Soy Sauce
1 TB Italian Seasoning
1/2 Girards Champagne Dressing

-THE NIGHT BEFORE
-Cook the pasta.
-Chop everything that needs to be chopped and then add it all into a bowl. Let it get nice and happy over night.
- Right before serving give it a good toss and adjust any seasonings.
**The thing that is amazing about this pasta salad is that you can make it your own. If you don't like a certain ingredient take it out. If you think something would be good in it then add it!!**
