Heart Healthy Low-Fat Chocolate Chip Zucchini Bread

I was in serious trouble.

You see I had this sucker on my hands.
One of my sweet friends grew this baby in her garden.  Have you ever seen a zucchini this big in your whole life?  I hadn’t that is for sure.  It is such a thing of beauty. 

I marvel at people that can grow things in their own back yard.  Anything that grows in my yard is not because of me.  If it is in my yard, it is there because it has a will of its own to survive.  Instead of a green thumb mine is, well…black. 

Back in our college days before I became a home owner, I used to dream of the garden I would have.  It was going to be lush and feed our whole family with nutritious, organic, home grown veggies. 

Then reality hit.  Gardening was not something I had in my bag of tricks, but combining my friends talents of gardening with my talent for food =MAGIC!!

At least that is what I keep telling myself…



Heart Healthy Low-Fat Chocolate Chip Zucchini Bread

1 cup all-purpose flour
1 cup white whole wheat flour (regular whole wheat flour works)
1/2 cup brown sugar (not packed)
1 -1/8 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/2 cup chocolate chips
1 large egg, beaten
2 tbs melted butter
1 cup apple sauce
1-1/2 cups shredded zucchini (not packed)

Preheat oven to 325. 

1. Combine flour, sugar, baking soda, and salt in a large bowl.  Mix well.  Add chocolate chips and gently mix to combine. 
2.  In a medium bowl, mix egg, vanilla, melted butter, apple sauce and zucchini.  Add to the flour mixture and stir until just blended. 

3. Pour batter into a large 9X5 in loaf pan.

4. Bake at 325 for 45-55 minutes, or until a toothpick inserted in the center comes out clean. Cool for about 10 minutes. Remove from loaf pan and let it cool before slicing.

  1. Heather, I have a butternut hybrid the size, shape and weight of a half watermelon. This'll be a great way to use some of it, and what's left of my Hershey bar stash.
