Surprise Apple Pie

“When I was a kid, my mom liked to make breakfast food for dinner, every now and then. And I remember one night, in particular, when she had made breakfast after a long, hard day at work. On that evening, so long ago, my mom placed a plate of eggs, sausage, and extremely burned biscuits front of my I remember waiting to see if anyone noticed! Yet all my dad ...did was reach for his Biscuit, smile at my mom and ask me how my day was at school. I don't remember what I told him that night, but I do remember hearing my mom apologize to my dad for burning the biscuits. And I'll never forget what he said: "Honey, I love burned biscuits." Later that night, I went to kiss Daddy good night and I asked him if he really liked his biscuits burned. He wrapped me in his arms and said, "Your momma put in a long hard day at work today and she's real tired. And besides... a burnt biscuit never hurt anyone!" You know, life is full of imperfect things... and imperfect people. I'm not the best at hardly anything, and I forget birthdays and anniversaries just like everyone else. What I've learned over the years is that learning to accept each others faults and choosing to celebrate each others differences, is one of the most important keys to creating a healthy, growing, and lasting relationship. So...please pass me a biscuit. And yes, the burned one will do just fine!  Life is too short to wake up with regrets... What a beautiful person this husband is.  He sets an example for us all.  When someone you love makes a great effort for you but what they have to offer isn't perfect, love the effort and the love that went into what they have done for you.

This world is too full of criticism and negative influences.  Be the type of person people feel safe with, especially with your spouse.  Your spouse should always feel that unconditional love from you.  After all isn't that how we all want to be treated.

PS This recipe is from my sister's Mother-in-law.  My favorite thing about Myrna is that she loves my sister so much. Means the world to me!!  Thank you so much for the recipe!!

Surprise Apple Pie
5-6 Apples
2 TBS Lemon Juice
1/2 C Sugar
1/2 tsp Nutmeg
1/2 tsp Cinnamon
2 TBS Flour
1/2 C Sugar
1/2 C Flour
1/4 C Butter

**Make or buy a pie crust first!!**
-Cut apples into large bowl & toss with Lemon Juice
-Combine sugar, spices, & flour
-Sprinkle over apples and toss to coat 
-Spoon into shell and make the topping

To make the topping:
-In a bowl cut together the sugar, flour and butter then sprinkle over apples to cover.  
-Bake on heated cookie sheet @ 375 for 1 hour.

Pie Shells
(makes 2 thick or 3 realllly thin pie shells)
2c flour
3/4c shortening
1tsp salt
1/4c water
1tsp vinegar
1 beaten egg

-Add two cups of flour in a bowl and then cut in the shortening. 
-Mix wet ingredients and then add them to the flour and shortening 
-Toss to combine. (Do not over cut or toss!)
-Roll out in flour. No mistakes, only roll ONCE! This keeps it flakey!
-Lay in pie tin, remove excess, and pinch around the edge.
