Healthy Turkey Meatball Sandwiches

Oh how I hope that this is true because life has been chuck full of the hardest tests for the past 3 years.  This quote gives you a glimmer of hope to think, “Well I must be a pretty darn tootin’ good student then!!”
So why haven’t I “punked out”?

Why did Steve Jobs have a liver transplant when he knew it wouldn’t save his life?   He KNEW it would only save him for a little while.

A couple weeks ago my Husband, Mother and I asked ourselves the question, “Would we have done the same as Steve Jobs?”  Would you choose to go through such a painful operation knowing it would be painful, knowing your quality of life would not be restored, knowing it would only save you for a little while?  I have asked myself that question over and over again since, and my answer is a resounding YES!

Having gone through so much pain this year I deeply understand why he did it.  He did it because this life is an amazing miraculous gift given to us by our Heavenly Father.  Every second of every day I thank my Heavenly Father for this beautiful life he has given me, even though every second for the past year or so is physically painful.

If you stop and look at your life, despite any trials you may be going through, you too will understand.  I have the worlds most beautiful children, an amazing family, the love of my life and the Gospel of Jesus Christ.  Every second I get to spend with those blessings would be worth anything I had to go through.  Absolutely anything.

Please stop and feel your many blessings.  Count them.  Cherish them.  For there lies true happiness.

Healthy Turkey Meatball Sandwiches
1 lb Turkey
1-2 tsp Salt
1 TB Pepper
2 Egg Whites
1 C Bread Crumbs (use your favorite store bought kind.  I used panko.)
2 TB Balsamic Vinegar
1 TB Good Olive Oil (do not add to turkey mixture!)
1 C Basil
1 package of your favorite Sandwich Rolls
2 C Mozzarella Cheese

1.  Preheat a skillet and add 1 tablespoon of olive oil to medium heat.
2.  In a bowl combine turkey, salt, pepper, egg whites, bread crumbs, and balsamic vinegar.
3.  Roll the turkey mixture into golf size balls and place them in the skillet.  COVER skillet with a lid.  **This is very important to get moist, tender meatballs.**
4.  Preheat the broiler.
5.  When the tops of the meatballs turn a "white" color turning frequently until all sides are browned.   **After each turn make sure to keep the lid on.**
6.  Once all the sides are browned dump the jar of sauce on top and heat until warmed through.
7.  When the meatballs are done and the sauce is nice and hot, place 2-3 meatballs in a roll, sprinkle your desired amount of mozzarella cheese on top, and then place in an oven proof dish.  Repeat for each roll.
8.  Place the sandwiches under the broiler until the cheese is melted.  About 3-5 minutes.  Finish with 2 TB of fresh julienned basil.
