It is a new week.  Thank the heavens!  
Sometimes the start of a fresh new week is what you need to take a deep breath, recommit to goals you have set for yourself and start checking it off your list.
So here is a healthy, delicious, fresh platter of veggies to start your week off in the right direction.

Chipotle Veggie Dip in a Cabbage Bowl
1 bottle of your favorite Chipotle Salad Dressing
1 Whole Cabbage
1 Yellow Bell Pepper
2 Large Carrots
5 Spears of Asparagus
*Substitute any of the veggies for your favorite veggies.
*Cut a little of the bottom of a head of cabbage and then cut off the top of the cabbage. 
*Hollow out enough to make a “bowl” big enough for the dressing.
*Pour the entire bottle of dressing in the cabbage “bowl”
*Slice up your favorite vegetables and place on a serving dish surrounding the chipotle dip.

  4. Myself I think this is a brilliant idea, but it says nothing about what to do with the cabbage you dig out. I cannot imagine that you are throwing that out? Is there no way to use it with the dip maybe, because cabbage is very sweet when raw. Thank you for all the great ideas.

  5. Oh look ! We are eating healthy ! Instead of chips and dip we have these fine vegetables, AND A WHOLE BOTTLE OF REALLY FAT DRESSING TO DIP IT IN !

  7. Use your leftover cabbage, chopped, for a great soup. Use vegetable stock from a carton, add water and simmer. Put the chopped cabbage, with all your other leftover veggies, 2 cloves of garlic, a small chopped onion, a couple stalks celery AND some celery leaves in large skillet with a bit of olive oil and saute until lightly caramelized . Add to simmering broth and slow cook for an hour more. I always add chopped parsnips, a couple of chopped potatoes, a can of diced tomatoes, a chopped turnip, and of course carrots. This makes a marvelous soup, hearty and filling and ideal for weight loss diet. I have some in the freezer now from a large batch from 2 weeks ago. The weather has turned cold today so it will be perfect for tonight!!!

  8. RE: "My Cabbage Soup" I said an hour more......I should have said an hour OR more......I like to simmer longer and add more water if needed........I only salt and pepper lightly....
