Gluten Free Grilled Cheese Chicken Sandwich

I have gone GLUTEN FREE.
I assure you it is not by choice. I am still trying to figure out why I am not
healing properly and in an effort to improve my health I asked a dear friend of
mine, Summer Wines (love you!), to give me suggestions on a homeopathic way to
get better since all of the doctor’s suggestion and medications have not
worked.
One of her suggestions was to try going gluten free. She also suffers from headaches and sometimes
migraines and since she had gone gluten free she hadn’t had a headache for the
2 months since she stopped eating gluten.
One night she had a piece of French bread and BOOM got a headache and
had to go to bed for the night.
So I said to myself, “Self, maybe there is something to this
gluten free stuff.” I have to admit
before I thought all the homeopathic stuff seemed like voodoo to me, but I don’t
think that any more.
I have actually really and truly noticed a BIG difference in
how I feel and the level of pain I have experienced has gone significantly down
since I have gone gluten free. (it has
been about a month)
Maybe you should give it a try too if you are headache prone
too!! It has been pretty easy because the
reason I am trying to get better so I can be a better Mom to my precious kiddos
and wife to my hubby. (and for myself of course)
Besides this recipe doesn’t even taste gluten free!! I have found that if you toast the gluten
free bread, it doesn’t taste any different from regular bread. Honest and truly!! I have also found that Udi gluten free bread tastes a lot better than the Trader Joe's brand.
Gluten Free Grilled Cheese Chicken Sandwich
4 slices of Udi’s Gluten Free Bread
½ Cup Cheddar Cheese
½ Cup Mozzarella Cheese
2 tsp Butter
A few pieces of left over chicken
*Preheat a griddle or
large pan to medium heat.
*Butter one side of each
piece of bread.
*On the side of the bread
that is not buttered sprinkle a little of the cheddar and mozzarella
cheese. Dividing evenly among the two
sandwiches.
*Place a couple of pieces of chicken on top of the cheese.
*Put the sandwiches
together making sure the butter side of each piece of bread is on the
outside.
*Place the sandwiches on
a preheated griddle or large pan. Cover
with a lid. This will allow the bread to
toast while melting the cheese.
*Flip over and let the
other side toast and then ENJOY!!!!
